The Shaolin school only accepts male students, and the Emei only accept females.
However, the most important thing in character customization is gender. Customization is about the same as any other game.
We are located on the Blue Dragon server. Before that, you'll be given a choice of servers. After you've made an account and you first log in, you'll be taken to a character creation screen.
